Hi everybody,

Things have been going well in my effort to total 1000 pounds in my powerlifting program. I have finally gotten 300 pounds in my deadlift and 265 pounds in my squat. I haven't really tried to go heavy yet with the squat and the 265 went up pretty easy. The only thing missing is the bench. I have a bit of tendinitis in the shoulder and have managed to do 200 for the max. I have had a lot of fun with the program and experimented with different exercises and rep schemes. What I have learned is that I can go heavier faster, and that it doesn't seem to overwhelm me nearly as much as when I first started. Aside from the shoulder I haven't had an injury yet (knock on wood) and hopefully I can continue to gain week by week and month by month. Thanks to my guides, Kevin McKnight and Todd Craig I have kept motivated and on track throughout my trek.

And thanks to you all that have helped and supported me, I will keep updating when I can.

[Relationship-Talk] My boyfriend smokes pot almost constantly......

 

I am in my late 40's and I have been sober in AA for over 15 years. I lost my husband to cancer about two years ago. Needless to say, that was agonizing and in some ways, it still is.

A few months ago, I reconnected with an old friend from high school. It was quite an incidental meeting as I was in no way looking to date. But we hit it off instantly and our friendship from high school proved to still be strong, but now there was more. We fell in love.

Early on, he told me that he used marijuana for chronic and severe back pain. Even though I am in recovery, I didn't see this as a problem. In fact, I believe it's probably a safer option as far as addiction goes than narcotic pain pills. He told me that he smoked a couple times a week. Over time, I saw that this was a severe understatement. As he grew more comfortable with me and with my awareness of his "habit" he let his guard down and I saw what the reality is. Even though he is a successful professional, he smokes pot every day, several times a day and almost constantly on the weekends.

This became intolerable for me. It was painful to watch. He seems to see no downside where marijuana is concerned, but I believe it will kill him. This is not something I'm willing to witness. I've been through enough. I told him this just a couple days ago and he is raging angry. We are not talking and maybe we never will. But how in the world can he think that smoking ANYTHING morning, noon and night is no big deal.

I know I did the right thing. Really no choice. He's furious that I implied he was an "addict." Well, what would you call it?

God Is Setting Things In Order!!

Isa. 49:8 "This is what the Lord says: "At just the right time, I will respond to you."

God is never late, He is always on time. Don't be impatient. Wait upon the Lord. He is setting things in order. It may not seem that way in the natural, but remember, God ways and thoughts are higher than ours. God will use the foolish things of this world to confound the wise. Trust the Lord at all times.

"And I know that whatever God does is final. Nothing can be added to it or taken from it. God's purpose in this is that people should fear Him. Whatever exists today and whatever will exist in the future has already existed in the past. For God calls each event back in its turn." (Eccles. 3:14-15).

There is nothing past, present or future that God has not known. God knows how to achieve His own end result. God is never late, He is always on time. Therefore, continue to trust the Lord and lean not to your own understanding.

My friends, are you worrying about your future? Trust God and don't worry because whatever will happen in your future regarding your situation, God has already seen it. God has already been there. GOD IS ALL POWER.

While most of you await healing and restoration, one of your greatest fears is fear of tomorrow. If we place our confidence in God's power we have nothing to fear. God has given us His Word that He will take care of our tomorrows if we simply put our trust in Him.

While you are waiting for God to heal and restore your marriage, don't be weary. God is orchestrating events in your lives to bring Himself glory. Like Lazarus' sister, we don't know God's timing for bringing dead things to life, but we can trust that just as He knew the plan He had for Lazarus, by raising him from the dead, He knows what He is doing with your situation.

When we pray, asking of God, we are to pray without ceasing (1 Thessalonians 5:17). Zacharias prayed a lifetime asking God for a son and never gave up on God. Yet, when it seemed most unlikely, God answered Zacharias' prayers.

We would do well to take a lesson from the prayer life of Zacharias by not giving up on God when it seems He is never going to answer our prayers. Pray without ceasing expecting God to answer your prayers in His perfect timing, and in His perfect way.

Be encouraged and know that at the appointed time, your circumstances will turn in your favor. The power of satan will be blunted. Victory will ensue. Blessings will abound. Praise God! Hallelujah. Wait for the times of the Lord! Do not give up. Do not lose hope. Wait for God's perfect timing. Remember, if you wait, you win.

My friends, we cannot manipulate God. All the fussing, anger, unbelief, rebelliousness cannot move God faster to restore a marriage. He will do so in His perfect timing. Trust Him, The CREATOR knows best. He will not put you to shame if you are trusting Him to heal and restore.

I want to thank you for supporting this Ministry. I may not know all your names, but God does and I am praying for each of you daily. Thanks again for considering this Ministry. God bless you.

A Week in the Kitchen with Carol


Happy Spring, everyone! I know it's May and this is the April newsletter. We've had some technical difficulties with the web site and I wasn't able to send the newsletter out last month. Hopefully it will be resolved before the May newsletter is ready!

 

It is great when it starts to warm up outside. We set up the grill and have started to cook our meals outside. I got a new cast iron skillet for my birthday. It's a small square with ridges. I used it for the first time after seasoning it. Seasoning a cast iron skillet is easy. Preheat your oven to 350 degrees. Position one rack in the top third of the oven. Position another rack in the bottom third of the oven and place an empty foil lined baking sheet on the bottom rack. This sheet will catch any dripping from the cast iron. Coat the skillet with vegetable oil and place it upside down on the top rack. Bake for one hour. Turn the oven off and allow the pan to cool down in the oven. You may need to do this several times to get a smooth and shiny "nonstick" surface.

 

It has been a crazy couple of months at my house! My husband and I are now officially "empty nesters". Our son joined the Marines and has left for basic training. We are so proud of him! I have been trying to clean out the freezer so I can get ready for some new Spring/Summer recipes. It's not an easy task but I have made some progress. Every time I go through this process I wish I was better at labeling the packages before putting them in the freezer! (I'll have to work on that!)

 

Since it is just the two of us, we have been debating about getting rid of the basement freezer and just using the refrigerator freezer for cooking day. Have any of you made this move? I've also been creating and testing some recipes that are made for two people instead of four. It's an adjustment - not just the cooking but the grocery shopping as well. It will take time to adjust!

GLUTEN FREE RECIPE FOLLOW-UP

From Vicki - Have you tried looking into using coconut flour for your gluten free cooking tests? We have been experimenting a bit here, using recipes from www.freecococonutrecipes.com (also accessible from the www.tropicaltraditions.com website).

 

I saw the coconut flour in the store but I have not tried it. The websites listed above have lots of gluten free recipes that you can try.

 

From Kelli - Kelli passed along some of her favorite gluten free recipes. She recommends Alison's Gluten Free Bread from allrecipes.com. She also recommends the All Purpose Gluten Free Flour Mix and the Homemade Gluten Free Bread from glutenfreecookingschool.com.

 

From Kathleen - The way I save money doing gluten free baking is to make my own flour mixes and I start with buying the whole grains in bulk and grinding my own flour. Before grain grinders were easily available, I just used my Vitamix blender and ground brown rice flour. I did this for years! Now I have a grinder and the flours we use have more variety, like sorghum, teff, garbanzo. I buy all these in bulk from my food co-op (I use Azure Standard) and grind them as I need them. This saves a ton of money over using expensive mixes.

My favorite pizza crust is from the Flying Apron Bakery cookbook. It is quick and simple and delicious. It has brown rice flour, garbanzo flour, and flax meal. Plus a few other simple ingredients. I also really enjoy a simple almond flour crust that has no yeast. It is the quickest and easiest yet.

I was able to check out the Flying Apron Bakery cookbook from our local library. There are lots of good recipes to try. I would recommend checking the book out if it's available.

 

In searching for another gluten free pizza crust recipe to test, I ran across a great website with lots of gluten free recipes. Its glutenfreegirl.com. They explain that some people who are trying to cook gluten free can experience digestive issues with xanthan gum. They make a lot of their recipes with flaxseed instead. They have their own recipes for whole-grain gluten free flour mix and pizza crust. Check it out!

 

 

BONUS RECIPES


People ask questions about how we create recipes for 30 Day Gourmet and why we have to test the recipes. Creating new recipes for the newsletter, web site, and books is a trial and error process. First you have to try the recipe fresh to see if you like the taste, texture, combination of ingredients. If you don't, you have to keep trying different combinations until you find something that works. I know from experience that this can take time and lots of patience! Several recipes that I created for the Big Book of Freezer Cooking took several tries to get it right.

Once I find the combination of ingredients that is right, I serve the recipe to friends and family to get their opinion. Does it have the right combination of ingredients. Are the spices right? Is it something missing? Most of the time at this point in the testing process, recipes will pass the initial "fresh" taste test.

Next I have to test the freezing process. Most things will freezer but sometimes the end result is not what you expected. If this is the case, then you have to determine the best method for freezing the recipe. We have to answer the following questions:

  • Can the recipe be frozen fully cooked? (See Sloppy Joe Sandwich Filling)
  • Or should it be frozen uncooked on assembly day and then cooked on serving day? (See Chicken Kabobs)
  • Or can this recipe be frozen either uncooked or fully cooked? (See Chicken Cordon Bleu Lasagna)
  • Is this recipe best packaged as a "kit" (ingredients are packaged separately and assembled on serving day)? (See Stacked Enchiladas)
  • Does the recipe need to be thawed before reheating or cooking on serving day?
  • What's the best method to reheat the meal - stovetop, microwave, oven, slow cooker?

As you can see, testing the recipe can be a long process and it's not always a successful one. However, most of the time you can create wonderful freezer friendly recipes for your family. It just takes a little time and patience! Over the next several months I thought it would be fun to post some recipes on Facebook® that I am testing. Give the recipe a try yourself and make some suggestions on how you would serve it and freeze it. Or email me a recipe that you would like converted to a freezer recipe and we can convert it together. I look forward to hearing from you!

Honey Lime Chicken Marinade

This is a wonderful spring grill recipe. We enjoyed this recipe served as a shish kabob skewered with zucchini, pineapple chunks and peppers (green or red). Serve it with Creamy Garlic Parmesan Rice and a vegetable.

Oatmeal Molasses Bread

I love making homemade bread and this recipe is very nice. It's a sweet, dark bread with a nice flavor. It's great warm with some honey butter.

Pastor, I sent you a note last week telling you that my husband called to say he is thinking of giving our marriage another try.

Well, I am writing you again to tell you that my husband came home yesterday and we have decided to go to counseling. God is good and faithful. I want to thank you for your daily encouragement. They help me to get through the day.

I just ask that you continue to pray that his love and feelings for me come back to greater than they ever were. Please just continue to pray for our complete restoration of our love for one another and our marriage. I am sorry I have not been able to support your very valuable Ministry, but when things get better I will be supporting you. Thank you so very much. JenJen

Exceeding Your Expectations

Ephesians 3:20-21 "Now to him who is able to do immeasurably more than all we ask or imagine, according to his power that is at work within us. To him be glory in the church and in Christ Jesus"

It's easy to get discouraged as we go through life. Our natural tendency is to complain and grumble when things don't go our way. Our society encourages such behavior as well. But we need to look at biblical examples and God's Word in order to understand how to handle disappointment and delay.

We must remember this Scripture when we are going through difficult times, feeling down, and when we fail. We are a work in progress. God is not finished yet. He is perfecting and preparing us. And He is FAITHFUL. He will complete His work in us.

While you are going through this situation in your home, you may have asked your pastor, a friend or your family for help to heal and restore. Healing and restoration CANNOT be accomplished through man, ONLY God can do this very thing. God is able to perform this difficult task. Your friends or family may have prayed or fasted, but man need the help of God to heal and restore.

Do you need healing and restoration today? What other needs do you have? What do you want God to accomplish in your life and through your life for His glory? Whatever is your answer, He is able to do all these things—and much more. Nothing is hard for the Lord. God is able to outdo your expectation.

Philippians 1:6- Being confident of this very thing, that He who has begun a good work in you will complete it until the day of Jesus Christ.

Are you confident that God can heal and restore? Are you confident in God that what He has started He will complete. My friends, be confident in God, He will never fail you. He will finish this work He has started in you.

You may be hurting now, but He will finish His work. Your spouse may have abandoned you; you may have been divorced against your will; this will not stop the work has to complete in you. Yes, God will complete this work in you. Be confident of this very thing.

God is able to perform this miracle in your situation. Romans 4:21 - And being fully persuaded that, what He had promised, he was able also to perform.

What God begins, He completes. This should bring comfort to each of you who waits in anticipation for healing and restoration.

God can be trusted to do what He says. He will finish what He started in you.

I am praying and standing with you. If you can support this Ministry at this time, I would appreciate any help you can offer. May you be blessed and have the peace of God.

God Has A Good Track Record - Part II

Romans 4:18 "Who against hope believed in hope, that he might become the father of many nations, according to that which was spoken, So shall thy seed be."

God has a good track record and no matter what situation you are faced with, God is able to turn it around. Keep praying and don't give up. Prayer changes things. Jesus tells us, "...The things which are impossible with men are possible with God" (Luke 18:27).

Do you believe this word from the Lord? Do you accept that He can perform the impossible in your situation, in your family, your finances, health, etc?

The Lord is good, a Strength and Stronghold in the day of trouble; He knows (recognizes, has knowledge of, and understands) those who take refuge and trust in Him. Nahum 1:7.

"The steadfast of mind You will keep in perfect peace, Because he trusts in You. Isiah 26:3.

God has a good track record. He has already proven Himself. What He has done for others, He is able to do it for you too.

A Prayer: Father, God of All Hope. Let Your Spirit dwell within me. Never let the spirit of doubt or despair come near me. Always and forever, dear Lord, let me have hope even when outward appearance would say. "No, There is no logical reason for any hope here."

Please, Lord, let me remember Abraham, and hope against hope; just like he did. Help me, always, to trust and believe in You and Your Word. For truly, You are a God who specializes in hopeless and impossible cases.

I say to each of you today, God has a good track record. He has already proven Himself to be faithful. Dedicate your life to the Lord. Enlist Him to be your Coach, your Partner, your Encourager, your Refuge, Fortress and Strength.

In life's journey, know that you will fall sometimes, but God will pick you up, brush you off, and lead you back to the path that He has carved out for you. You can TRUST God to do that.

If you are resolving to trust in anything else, it will fail. I encourage you to start with trusting God in your situation. He is faithful and has a good track record.

I want to thank those who have been assisting me in this quest for the healing of marriages. Without your prayers and financial support, there is no way I would be able to encourage and minister to many. I thank God daily for your obedience and faithfulness.

God Has A Good Track Record - Part 1

Romans 4:18 "Who against hope believed in hope, that he might become

God has a good track record. He did it for Abraham and He will do it for you. God had already proven Himself. He is the same yesterday, today and forever. Will you trust Him today to heal and restore?

With God all things are possible. Nothing is hard or difficult for the Lord. If you are struggling in your marriage, God is able to fix it. God is able to bring life to the dead. He is able to make the blind see. The deaf to hear. The lame to walk. If you believe your marriage is dead, God is able to bring life to a dead marriage, because nothing, absolutely NOTHING is hard for the Lord.

You don't need to see anything or hear anything positive happening in
your situation for God to heal and restore your marriage. God can
work with negatives as well as positives. Remember, we are talking
about God here.

We are talking about a God who can do ANYTHING. He can raise the
dead. If your situation is dead, He is capable of resurrecting your
dead situation and bringing life to it. He did that with Lazarus.

Many of you are losing hope, especially when you listen to the
negative language of your wayward spouse. Your spouse may have been
telling you not to wait on them because they are not returning, or
telling you they have made a mistake in marrying you. Don't listen
to their negative words. They all speak the same negative language.

Yes my friends, hearing these negative things are enough to feel
hopeless. I want to tell you that we are not walking by sight, we are
walking by faith. So in spite of the negative things you are hearing
and seeing, keep your eyes focused on the Lord, the Author and
Finisher of your faith.

Today, make a special effort to spend time listening to God's Word
and let hope begin to work in your life. With God on your side, you have hope and you cannot lose.
